Seasonal eating recommends salads when it’s warm, and warming vegetables when it’s cold. I tend to follow these rules and leave my beloved salads behind when it starts to cool down, and then revisit them in the spring. This grain based, wintertime salad is a great way to capitalize on seasonal foods and keep a salad in the mix. It would also be a gorgeous holiday side dish.
